    Vegetable tempura bento

    I was craving something fried, so today I made vegetable tempura. It's for my lunchbox, so I don't need to worry too much about the shape.

Ingredients and Instructions for Vegetable Tempura (2 servings)

Vegetable Tempura

  • Onion
    1 small
    Carrot
    Half
    Shimeji Mushrooms
    1/4
    Mitsuba (Japanese parsley)
    6 sprigs
    Tempura Flour
    50g
    Water
    80g
    Oil
    200g
    Wheat Flour
    1 tablespoon (15g)
    • Cut the vegetables into pieces about 2mm wide

    • 1Dust with flour.

    • 2Dust with tempura batter mixed with water.

    • Heat about 3cm of oil to about 170-180℃ and add the pieces. Using a skewer or similar makes it easier to add them. Fry until golden brown, about 2 minutes on each side, and it’s done.

Using tempura flour makes making tempura easy, and I don’t make large quantities for bento boxes either.

When there’s a lot, eggs and flour are fine, but tempura flour is convenient, isn’t it? Eggs have been expensive lately. Fried chicken flour is also convenient, isn’t it?

Kakiage and Tempura Donburi Sauce

  • Soy Sauce
    2 tablespoons (30g)
    Sake
    2 tablespoons (30g)
    Mirin
    3 tablespoons (45g)
    Sugar
    1 tablespoon (15g)
    • Heat the sake and mirin to evaporate the alcohol. About 1 minute after it boils.

    • Add soy sauce in 2. Done.

Ingredients and Instructions for Side Dish

Stir-fried Okra and Sausage

  • Sausage
    2 pieces
    Okra
    2 pieces
    Sesame Oil
    1 teaspoon (5g)
    Soy Sauce
    1 teaspoon (5g)
    Shichimi Togarashi (Japanese seven-spice blend)
    4 shakes
    • Cut the sausage and okra in half

    • Add sesame oil and stir-fry 1

    • Once it’s slightly browned, add soy sauce. Finally, sprinkle with shichimi spice.

Spinach with sesame dressing

  • Spinach
    One bunch
    Soy sauce
    1 teaspoon (5g)
    Sugar
    10g
    Ground sesame seeds
    1 tablespoon (15g)
    • Boil the spinach for about 20 seconds and drain the water

    • Mix soy sauce, sugar, and ground sesame seeds

The bento is complete
